Cooking in Spain: Roasted Potatoes and Veggies a.k.a Student’s Food

One of my flatmates asked me whether roasted potatoes and carrots is my “new” favourite food. Because apparently through her observation I have been cooking this dish a lot! Tee-Hee 🙂

Hmmm… I paused for a second before answering her question. I am not really a fan of potato dish unless there is a meat involve, such in semur, perkedel, or steak. But yeah, I have to admit that I have been cooking this roasted potatoes often lately. In fact, I made a similar one with microwave when I was in Denmark last year: Potato and Vegetables. Then, I answered her.

Well, this potato dish is easy to make, just peel, chop and clean along with other veggies I want (or have or found in the fridge :p). Then sprinkles all the seasonings. I usually put rock salt, pepper, pimieta cayene (chili powder) and olive oil. If available,  I also put basilikum (basil), rosemary, and garlic powder. And the last one, is for me, the most important. If I dont have it, I would chop 1-2 cloves of garlic and sprinkled it over.

It normally took me 10min to prepare, depends on type of veggies I want to cook. Sometimes, I put champignon as well. Preheat the oven for 5min before putting them inside. I like them to be a little burnt. So, usually I will go with 20-25min, 250 celcius degrees, with heat on both top and down. Meanwhile, I prepare a simple salad.

I would just toss anything that I could find in the fridge, salad mixed, onion, tomato and salad cheese.  I love pomegranate but it is very expensive, so I stop buying it. But it tastes really really good. I just sprinkled some salt, pepper and balsamico oil over it. When the potatoes are ready. I mixed them together and eat.

This dish, I name it as student’s food. LOL. Since they are very cheap, easy to make, delicious, warm and filling. And healthy! A sack of 1kg potatoes is just 2EUR and you can make 4-5 dishes like this. 700gr of carrots cost 0.75 EUR, one bunch of broccoli is 1EUR. 1 pack of salad mix is 1EUR. So, if you are like me, trying to survive as a student in Europe. This might be a good option. Bon appetite!
